Chocolate Kale Chips


Kale chips are a very healthy snack, and if you add chocolate to them they can be so delicious! You can buy a packet of kale already de-stemmed, or you can buy a whole bunch on the stem, although it might take two bags to fit it into, barely:


When done right, these are crunchy on the outside, and soft and chewy on the inside. Make sure to rub in the chocolate-oil mixutre into every nook and cranny, and make sure that they are completely dry before you put the mixture on them. They will shrink in the oven, and, if not big enough, the chips will dry up and stick to the tray. You can also rotate the trays halfway through the baking process. If you’re looking for a nice, healthy break from potato chips, these are for you!


For this delicious recipe, you need,

1/3 cup cacao powder

1/4 cup olive oil, or coconut oil

1/4 cup honey, agave syrup, or maple syrup, or a combination of these

1/2 cup cashews or your favorite type of nuts

1 bunch kale

1/4 cup shredded coconut (optional — I had some on hand)

1 tsp vanilla extract

1/4 teaspoon salt, or a pinch

1/2 tsp cinnamon


First, preheat the oven to 300 degrees Fahrenheit. Next, take the kale off the stems by holding the kale leaves from the bottom at the stem with your fingers and pulling up until the leaves come off.

IMG_8101Wash the kale and put through a salad spinner. If you don’t have one, just place them on some paper towels and let them dry. Then, tear them with your hands into bite size pieces and arrange carefully on a baking sheet (pictured here as covered in aluminum foil).


Put the cacao powder, oi, honey, cashews, coconut, vanilla extract, salt, and cinnamon into a food processor or a blender and blend or crush. Rub the mixture into the kale leaves on the baking sheet. You can put however much chocolate mixture you want (there is a lot). Don’t be afraid to pile it on if you have a sweet tooth!


Bake in the oven for about 20 minutes. Set your timer so as not to overcook! When you take them out, be sure to take them off the pan immediately as they otherwise will keep cooking on the hot cooking sheet.
